Santa's Favorite Cookies

Okay, we don't actually know Santa's favorite cookies. But, I'm willing to venture he will love either of these simple, but scrumptious, cookie recipes. Coming from someone that lives, works, and plays, in Santa Claus, Indiana, we know a thing or two about cookies. These recipes have carried me through everything from last-minute celebrations to Christmas treats for Santa and his reindeer. And, believe me, if you can boil water, you can make these cookies. They are that simple!

Easy Peanut Butter Cookies: 

These easy cookies come together quickly and require only basic pantry staples. You can easily upgrade this recipe, too! I've dipped half of the cooled cookies in melted chocolate for a pretty and tasty display. Or, sandwiched two cookies between chocolate frosting for a sweet and salty treat. Ingredients: 1 cup creamy peanut butter 1 cup sugar 1 egg 1 tsp vanilla extract Coarse salt for garnish Directions: Preheat oven to 350 degrees F. In a medium-sized bowl, combine peanut butter, sugar, eggs, and vanilla. Mix until combined. Form 1-inch balls, and place on ungreased baking sheet about 1 inch apart. Slightly flatten balls using a fork making a crosshatch pattern. Sprinkle with coarse salt. Bake about 10 minutes, or until edges are brown.

These cookies require only three ingredients you probably already have on hand. These cookies are just as good with a simple icing or glaze as they are alone. Ingredients: 1 boxed cake mix (I like devil's food and Funfetti, but any flavor will work.) 2 eggs 1/3 cup canola oil Directions: Preheat oven to 375 degrees F. Combine all ingredients in a medium-sized mixing bowl. Make sure all cake mix is combined. Form 1-inch balls, and place on ungreased baking sheet about 1 inch apart. Bake for 12-14 minutes, or until cookies have flattened and edges are browning. Yes, it is that easy! I'm pretty sure Santa will love getting either of these on Christmas.
